I love peppered chicken and for this recipe, I have used chicken wings but you can also use chicken drumsticks, breasts, or thighs. Unlike Chinese salt and pepper chicken, this recipe does not involve frying at all which makes it healthier, no cornflour is used in making this chicken recipe.

Pepper Chicken Recipe
This pepper chicken recipe is easy to cook and ready in less than an hour. The pepper wings are flavorful and tasty. They are baked and then stir-fried in tasty pepper sauce.
They are healthy and packed full of protein and you can adjust the pepper to how hot you want the chicken.
Ingredients for Pepper Chicken
Chicken wings
Paprika
Parsley
Garlic powder
Onion powder
Stock cube (bouillon cube)
Bell pepper
Onion
Garlic
Spring onions
Olive oil
Scotch bonnet or Habanero, or chillies.
Salt
How To Make Pepper Chicken
This dish is ready in under an hour. Let me show you the easy steps on how to make it.
Measure out all ingredients, chop the onions, bell peppers, spring onions and chillies. Set aside.
Pat the chicken dry then add black pepper, garlic granules, onion powder, parsley, and oil. Mix well.
Arrange the marinated chicken on oven tray and bake in the oven at a temperature of 200C/400F for 45 minutes. Turn the chicken after 25 minutes to brown the other side.
When chicken is baked to a golden brown, bring out of the oven.
Place a wok on heat and add 2 tablespoons of oil. Add in the chopped onions and garlic and saute for 1 minute before adding the bell pepper, spring onions, and stock cube (bouillon).
Saute for 2 minutes before adding in the baked chicken. Stir fry for a minute coating the chicken with the peppers and onion then take off the heat.
Serve and Enjoy.

Storage Information
To store leftovers, leave to cool and put in an airtight container, then store in the fridge for up to 3 days or in the freezer for up to 3 months. Reheat in the oven or microwave. To reheat in the oven, place chicken on an oven tray and bake at a temperature of 375C for 15 minutes or till heated through.
Tips
- Marinate the chicken 30-60 minutes prior to baking if you have the time.
- If you don't have an oven, you can use an air fryer to bake the chicken or use a deep fryer to fry the chicken or deep fry in a pan.
