There are many ways of cooking rice and beans in the instant pot. There is the instant pot Jamaican rice and beans which I have the recipe on my other blog recipevibes.com, there's the Nigerian rice and beans, Mexican rice and beans and other types. This method I have used in this post is flavorful, delicious, easy to cook and you will love it.
Instant Pot Rice and Beans Recipe
This is a one pot recipe that makes use of few simple ingredients. I used canned cooked beans. If using dried beans, cook it first either in the instant pot or on the stovetop but it's best cooking in the pressure cooker.
The beans of choice for this recipe is Red kidney beans however you can use other types of beans such as black-eyed peas, brown beans, Mexican black beans, crab beans, etc.

Ingredients for Instant Pot Rice and Beans

Rice- Easy cook long grain or Golden sella basmati rice.
Beans - Canned or precooked. Kidney beans, black eyed peas or black beans.
Oil- Vegetbale, sunflower or olive oil.
Onion
Garlic
Cayenne pepper
Paprika
Curry powder
Thyme
Tomato paste
Broth - chicken, beef or vegetable
Salt

How to Cook Rice and beans in instant pot
Put on the instant pot and set to saute.
Add oil in the pot of the instant pot then add the chopped onions. Saute the onions till fragrant and translucent(about a minute) then switch off the saute function of the instant pot.

Add cayenne pepper, paprika, curry, thyme and tomato paste.

Stir, add in chicken broth then deglaze the instant pot by scraping off any stuck bits at the bottom of the pot.
Wash the rice then add in the washed rice and kidney beans in the pot. Stir and cover the instant pot with its lid.
Turn the knob on the lid to 'sealing' and set instant pot to manual pressure cook for 7 minutes. After the 7 minutes of pressure cooking, do a 10 minutes natural release.

When the pot is depressurised, take off the and stir the rice.

Serve and enjoy.

What to serve with
This can be eaten on it's own or served with salad or steamed and sauteed vegetables if vegetarian. Meat sides that can be srved with rice and beans include:

How to Store
Leave to cool completely, put in an airtight container or Ziploc then store in the fridge where it'll last for up to 3 days or in the freezer for up to 3 months. Reheat on the stove or in the microwave.
