YOU SURE CAN! This roast potatoes recipe does not limit you to just using yellow potatoes. You can use russet potatoes, Vitelotte potatoes, or King Edward potatoes.

Can I use my own seasoning to season the potatoes?

Yes, you can. The seasonings I put in this recipe are just suggestions. You can barbeque spice, steak seasoning, your own special rub, or just salt and pepper!

Can I use any herbs I want?

Of course! But I suggest that you stick to the herbs in the recipe because they are all there to balance the flavor of each other and of the seasonings.
