- 2 cups Rice long grain rice or golden sella basmati rice.
- 400g can Kidney Beans
- 4 tablespoons Oil vegetable, sunflower or olive oil
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 teaspoon Cayenne pepper
- 1 tablespoon Paprika
- 1 teaspoon Dried thyme
- 1 teaspoon Curry powder
- 1 tablespoon Tomato paste
- 3.5 cups Chicken broth
- Salt
Put on the instant pot and set to saute. Add oil in the pot of the instant pot then add the chopped onions. Saute the onions till fragrant and translucent(about a minute) then switch off the saute function of the instant pot. Add cayenne pepper, paprika, curry, thyme and tomato paste. Stir, add in chicken broth then deglaze the instant pot by scraping off any stuck bits at the bottom of the pot.
Wash the rice then add in the washed rice and kidney beans in the pot. Stir and cover the instant pot with its lid.
Turn the knob on the lid to 'sealing' and set instant pot to manual pressure cook for 7 minutes. After the 7 minutes of pressure cooking, do a 10 minutes natural release.
When the pot is depressurised, take off the lid and stir the rice.
